
Kasen traces its philosophy to Murata Shinji, Master Chef and innovator of LA-style sushi at Hiko Sushi in Los Angeles — built on the season's most trusted seafood, the highest-quality ingredients sourced globally, and a refusal to treat tradition as fixed. The thesis is simple: reinvestigate tradition to push the evolution of sushi forward, rather than repeat what's already been done. Kasen opened in Saigon in 2018 as Hiko Sushi's sister restaurant, carrying that thesis into a new city.
