The Kasen progression
From sashimi to sushi and cooked courses.
Sashimi opens the meal: carefully prepared and cut seafood, served with Kasen's own sauces and companion ingredients.
Sushi follows. Soft, delicate fish meets warm, distinctly seasoned shari—familiar sushi with a different feel.
Cooked washoku courses close the meal, bringing Kasen's refinement of Japanese tradition into the final dishes.
