How to choose an omakase in Saigon

Omakase means you leave the meal to the chef, so the choice of restaurant matters more than usual. Check these seven things before you book.

What to check before you reserve.

  1. The counter. Kasen has ten seats, with each course prepared and served within view.
  2. The seafood. Look beyond the ingredient name to how the fish is prepared. Kasen's sashimi is carefully cut and served with its own sauces and companion ingredients.
  3. The whole meal. Kasen's fifteen courses begin with sashimi, move into sushi and finish with cooked washoku dishes. Allow about one to one and a half hours.
  4. Your menu. Compare Premium, Sashimi, Seasonal and Wagyu on the menu page, where current prices are listed together.
  5. Lunch or dinner. Kasen opens daily at 10:30, with last arrival at 21:30. Choose your arrival time when reserving; there are no fixed seatings.
  6. Booking terms. Look for clear rules on confirmation and dietary requests. Kasen confirms every reservation by email or phone, holds a seat only after you receive that confirmation, and can meet most dietary restrictions.
  7. A room of your own. The private room seats two to twelve, with Sashimi, Seasonal or Wagyu. Premium is served only at the counter.
