How to choose an omakase in Saigon

Omakase means you leave the meal to the chef, so the choice of restaurant matters more than usual. Check these seven things before you book.

What to check before you reserve.

  1. Seat count. A small counter lets the chef serve every guest at the same pace. Kasen has 10 seats.
  2. Where the fish comes from. Ask which fish is sourced from Japan and how often the menu changes. Kasen builds its menu around Toyosu fish and the season's seafood.
  3. A clear price. The price should be stated before you book, with service charge and VAT made clear. Kasen's Premium menu is ₫2.8m per guest, before 5% service charge and 8% VAT; its other menus run from ₫3.8m to ₫4.2m.
  4. A visible menu. You should be able to see the number of courses and the style of the meal in advance. Kasen lists its four menus, with prices, on one page.
  5. The rice. Good sushi depends on the shari, the seasoned rice. Kasen serves it warm.
  6. Booking terms. Look for clear rules on confirmation and dietary requests. Kasen confirms every reservation by email or phone, holds a seat only after you receive that confirmation, and can meet most dietary restrictions.
  7. Group options. If you are bringing guests, check for a private room. Kasen's seats 2 to 12 guests with the Sashimi, Seasonal or Wagyu menus (₫10,000,000 minimum spend), and full-restaurant buyouts start from ₫38,000,000.
