Black Truffle, Shaved Fresh

Not a single dish — a finish that turns up across three different courses.

Black truffle isn't built into one signature plate at Kasen — it's a finish the kitchen reaches for wherever it earns its place, across the Sashimi, Seasonal and Wagyu Omakase courses. Two dishes carry it most: halibut sashimi, sliced thin enough that shaved truffle can sit directly on the fish without burying it, and foie gras sushi, where the truffle's earthiness meets the richness of the foie gras instead of competing with it. Fresh truffle is graded by scent as much as looks — a full, unmistakable aroma the moment it's cut, not a faint one that fades by the time it reaches the counter.
