What's included
Fifteen courses, not a set menu.
Every Kasen omakase is fifteen courses, served over roughly 1 to 1.5 hours: otsumami, sashimi and nigiri built around fish flown in from Toyosu market, alongside modern washoku dishes shaped by the season.
Rice is shari, warm and seasoned to order — not held cold on a counter. Each course is introduced as it's served, at the counter, before Kim Chu. That's what the price buys: not fifteen plates set down in sequence, but a chef working through a menu built for the guests in front of him, one course at a time.
